Pork Chops and Applesauce...Swell!

Move over Peter Brady, Alice has nothin on these pork chops and apple sauce! I love pairing meat with fruit. One of my favorites is pork and apples. I Googled some pork and apple recipes today but nothing made my mouth water, so I decided to create my own. Here's what I did:
2 to 4 boneless pork chops
3/4 stick of butter
dash of sage
red onion sliced (thick or thin, it's up to you!)
2 peeled and sliced apples (again, you can dice them or leave it think and chunky, you're preference)
splash of apple cider vinegar
1 to 2 tablespoons of brown sugar (depending on how sweet you want it, I prefer dark brown sugar for more of a molassesy taste)
2 splashes of white wine
handful or 2 of raisins soaked in hot water then drained
dash of ginger, salt, pepper, nutmeg

I seasoned the chops with sage, salt and pepper and seared them in my big ole iron skillet. Once browned, I set aside and threw in half the butter into the hot pan. After it had melted, I put the apples, raisins, and onions in for a swim. I added in some brown sugar. I turned the heat down to medium and cooked for 10 minutes. I stirred in the vinegar, wine, salt, pepper, nutmeg and ginger and the rest of the butter if needed. Once this got nice and thick and bubbly, I added the chops, covered them with the apple mixture, put a lid on it and cooked it all up til chops were cooked through.

The result was a warm and hearty yet slightly sweet meal that the hubby rated a 9.1. We served this dish with baked beans and broccoli but this would be great over mashed potatoes as well. This dish is a great warm-you-up dinner for a cold winter night that would make Peter say "Swell".
